I've been so busy with work I've hardly had time to post anything.
So I am taking a few minutes to post while making dinner.
So good news is we're finally going to have a full deck, or that is to say we'll be fully staffed for the first time in a long time. Really looking forward to that.
I've got some cool stuff I'll be sharing in the next little while, some of it work related.
Just know tonight, its all about the pork chops. I am making my favorite recipe and it smells SO good.
I might post some pics once its all done, because well that's what I do.

Sometimes you need a reminder...
... that life as you see and experience it isn't necessarily at all the same for anyone else.
I haven't posted in a while, but I've been thinking a lot lately and wanted to get this down before the thought left me.
Equality, it's certainly an idea. Something that many people are trying to get in various facets of their lives and at the same time others are trying to undermine. The problem, I think that arises out of all of this is perception. Let's face it, as long as someone actively tries to pursue equality for something for some group of people that isn't really equality - or at least not in the sense that its forced.
The simple truth we're forgetting is that humans, and this has been true since the beginning of recorded history and probably before, are so good at hate. In fact hate and its frequent neighbor bigotry seem ingrained in us. If we're totally honest with ourselves and each other we know that at some point during our lives we have all hated something or someone and perhaps still do. Additionally we've used bias and prejudice - sometimes fueled by fear, misunderstanding or popular sentiment, to make decisions against something or someone.
This is a natural human condition. Of course, that doesn't mean we are equally capable of love. I just feel that it seems its always easier for us to play the other side. We are so good at finding the things in other people that consider their weaknesses and exploit them. We may not even be aware that we're doing it. But if we want to find the good in people, that's something we have to seek out, it doesn't come to us as naturally or easily. Perhaps that has more to do with primitive survival instincts that have remained with us through our evolutionary process.
Either way, people suck. We do things all the time that some one or some group doesn't appreciate.
I myself do this all the time. It's not that I am a bad person, but I so easily find flaws and fault in others and exploit it where necessary or otherwise just belittle or make fun of people.

BBQ Pulled Pork
So this recipe was great. However I changed the following: I used pork chops because that's what I had available to me. I also put all of the spices which I eyeballed into a gallon size ziplock bag along with the pork chops to season them. 8 hours later on low all done.

If all goes according to plan...

I have planned the following dinners for the week:
Monday: Easy Slow Cooker Pulled Pork
Tuesday: Slow Cooker Chicken and Dumplings
Wednesday: Meatloaf with a twist
Thursday: Classic Chicken Pot Pie
Friday: Tacos Carne Asada
The weekend is still up in the air and frankly due to events occurring this week the whole menu is up in the air, we'll see what happens!

Pork Chops again sort of
So basically I was supposed to make pot roast, but started SO late that I wouldn't have time to finish.
Instead I make pork chops again, but mixed two recipes - I made part of this Pork Chop recipe from Week 1, and part of this Chili recipe which we were supposed to have next friday, but called for "ground pork" soon I'll be able to read....
Anyway I don't have any pictures because my phone which is also my camera was near death and not charging correctly, thankfully I might get a new one soon.
In case you're curious I made the chops as directed to the point where they are in the oven.
I then made the chili - adding everything but the pork. I just let it boil and reduce until the chops were ready. Then I poured it all into the baking dish and baked it for 30 minutes more.
The chops were super juicy and the chili/beans were tasty too.
