Crock Pot gets used again to make Slow Cooker Chicken Taco Soup

So this was the first time I made anything like this and I loved it, recipe in the link back there. I followed all of the recipe, except the beer, I just put in 1 and 1/2 cup water. It was still very flavorful. Pretty much all the stuff I used was Food Club brand from Super 1 Foods because it was inexpensive and just as good as the name brand. I don't have any prep pictures, but I still have a plastic-ware container full that I am taking to lunch tomorrow.

Now I will say because I didn't get home to take the chicken out and shred it and put it back in, it was still okay, When I tried to take the chicken out it literally fell apart on the fork.  So I just took a fork and knife and cut it up in the crock pot. Turned out just fine.

When I removed it from the crock pot and placed it in the bowl I added sour cream, shredded cheddar cheese and some tortilla chips.  Everyone liked them, even Evie, our two year old daughter.

Below is the leftover I am taking to lunch tomorrow. I can't wait! My wife took some to lunch today and she said it was great.  We just put some chips in a zip lock bag and she took them that way.

I am definitely making this again. This gets 5 stars in my recipe book!


Impossibly Easy Cheeseburger Pie

Yup, Impossibly Easy Cheeseburger Pie, the recipe on the Bisquick box.  We buy Bisquick at Sam's Club usually to make waffles on the weekend, but I've made some recipes with it too.  This is one we've made before and I thought it would be an easy start.

I unfortunately have no pictures, but the above link does it justice, granted theirs is topped with stuff, I just eat mine with ketchup.

Either way, I will probably make this recipe again!

Diet Day 6 - Everybody has a bad day whem they are dieting

So, today was a bad day. I have surpassed 2000 calories and have not even eaten dinner. Although I am not necessarily hungry. The main culprit was soda. I probably had the equivalent of a 2L of coke or more. Plus I had fries, part of a cheese burger and a funnel cake. In case you are wondering I had the day off today and originally planned on helping Chelsea clean out her class room, but she finished yesterday and since I had already taken the day off we went to Six Flags Hurricane Harbor in Arlington. I should mention I did try to be good by eating a grilled chicken salad, but I did have thousand Island dressing. Not to mention I ate some of Chelsea's fries, part of her Cheeseburger, and part of her funnel cake. Not to mention I made use of my free refills from my souvenir sports cup, sure I could've gotten a diet coke or something else, but I really felt like coca cola. I do think however all the water play must have burned a few of those calories. If I do eat dinner I will try to keep it small and healthy and make up for it this weekend, trying to stay as close to 1500 calories as possible and doing some yard work. Of course there will also be some cleaning up that also comes with the weekend.

This weather

So the weather is just annoying me. So much rain, and it just won't stop. I don't know how much more of this I can take. Of course it doesn't bother me so much as it bothers my driving ability. I say that in the fact that my car can't stop worth a crap in the rain, although that may or may not be due to the fact that I need new tires and more desperately need new brakes. Maybe, weather permitting, I can give my car some new brakes this weekend. That shouldn't take too long and hell it might even be fun to get out and do something. Now I just need to figure out where to buy some decent inexpensive brakes and remember how to change them. Thankfully I have a book on my car and the Internet is usually there to fill in the blanks. If all else fails I can always try my father in law as he is generally knowledgeable about these things.

First Day Down 7 Weeks To Go

So, I had my first day orientation yesterday. It was pretty cool. Long, but I suppose necessary. You have to fill out a lot of paperwork and I guess now a days HR thinks they need to make it a fun experience in order to want people to work there. I can't blame them, a call center does not sound like the most fun job, but I think it will go well. Now I have to get used to working nights. Thankfully I'll only start off noon to 9, but after that I am going to be 1:30 to 10:30. Sure it is not the most glamorous time or job, but it is a good one, I think and more importantly it will pay the bills.

Research up and running!...almost...

All the machines in research are up and running. All the networking, works. I was more surprised at anyone, since I installed a good deal of it over the summer. There are now 64 Dell Optiplex systems, a mix of 620s and 280s. Plus 22 Solaris machines, 11 Ultra Sparc IIi systems and 11 newer systems. Not really sure what they are running.

Now we just need to get printing worked out, maybe. Oh and some racks and other misc. equipment.

Orson Scott Card's Speaker For The Dead Book Review

Ok, I have read the second book in the series, Speaker for the Dead. Well, Card did it again. And this time he gave us a great story, although perhaps difficult to totally believe at first, but then, well it is supposed to happen in the future, and it is a book. First, so many characters, which at first I thought would be hard to follow, but none of them are flat or stale. You can reasonably be thrown into this book and first hand meet all of these people and know them. It is simply good. And the story has so many plot twists and turns, just like the original you almost don't want to put it down. I loved this book and the ending is perfect. That's all I can say, and did I mention, it also won a Hugo and a Nebula.

Book Review Orson Scott Card's Ender Game

To begin with, when you read it, you'll understand why it won a Hugo and a Nebula. Card made something which I see as very original and rather amazing. From the moment you start reading it, you really can't stop. Although, the chapters end in such a way that allows you to put the book down if you absolutely have to, say if you need to go to class or sleep. The dialogue is easy to follow and fun, but at the same time incorporates many characters very well in outer dialogue and inner monologue. I just have to say I really like it. Every chapter gave a new surprise and made it a fun read cover to cover.
